At our restaurant, Sagami, we take pride in our soba, which is made from carefully selected buckwheat flour. The best state of soba is said to be "freshly ground, freshly made, and freshly boiled." Since buckwheat flour oxidizes during storage, we grind it daily using a stone mill set up in our shop. The resulting flour is then used to make noodles on-site, and we boil them fresh for each order.

Every day, we carefully prepare our dashi stock in the morning and evening without fail. This is because the flavor of dashi diminishes over time. By blending selected ingredients that suit our region, starting with rich and aromatic sōda bonito, we focus on authenticity in our dashi, which further enhances the deliciousness of our soba and udon, a pride of our restaurant, Sagami.
