...to enhance their flavor, but in recent years, they have been thoroughly committed to cooking that makes the most of the freshness of fish that have just been landed and vegetables, saying, "We want to cherish the life of 'freshness,' which cannot be reversed." For example, they will grill yellowtail caught that morning over a firewood grill and serve it with Jerusalem artichoke puree and fermented Chinese cabbage instead of a sauce.
