Our artisans hand-make our carefully selected domestically produced buckwheat flour and wheat flour every day. The basic formula is 10 soba and 2 wheat, but the amount is slightly adjusted depending on the season. We will propose the optimal solution to bring out the original deliciousness of soba to its fullest, including smoothness, texture, and flavor. The homemade soup uses domestically produced bonito, kelp, soy sauce, red sake, mirin, and other ingredients to carefully extract the flavor.
