The recommended dinner course starts with a specialty dish of Kinuhime salmon. The course, which is updated every three months, uses plenty of local Chita Peninsula ingredients and seasonal ingredients, and also incorporates seasonings such as Chita's tamari soy sauce, soybean miso, and hon mirin, which are rich in fermented foods. Please enjoy pairing it with local sake.

We serve "Chita Bijin Soba" from the Chita Peninsula in all our courses. Grown on fallow land with recycled food compost, the soba is characterized by its rich flavor. In addition to serving it as soba, we use buckwheat flour in a variety of menu items. Other ingredients are carefully selected by our chef together with the producers. In particular, Meat Dishes made with Chita beef are a must-try when you visit our restaurant.
