Our soba is meticulously crafted from top-quality buckwheat flour. The ideal state of soba is said to be "freshly milled, freshly kneaded, and freshly boiled." Since buckwheat flour oxidizes during storage, we grind it daily using a stone mill installed at our shop. The resulting flour is then hand-made into noodles on-site, and we boil them fresh for each order.

We carefully prepare our dashi every morning and evening without fail. This is because the flavor of dashi diminishes over time. We blend selected ingredients tailored to the region, including the rich-flavored Katsuo (bonito), to create authentic dashi. Our commitment to quality enhances the deliciousness of the soba and udon that our restaurant, Washoku Mendokoro Sagami, proudly serves.
