DOUBLE-CHOCOLATE COCONUT LAVA COOKIES
Chocolate is good. Double chocolate with coconut is even better. These chocolate creations are so melt-in-your-mouth delicious that I call them “lava” cookies. Go on, try to have just one!
¾ cup salted butter
½ cup brown sugar
½ cup cane sugar
2 large eggs
1 tsp vanilla extract
1/3 cup unsweetened cocoa powder
½ cup unsweetened, desiccated coconut
¾ cup cake flour
¾ cup Flour Power Blend (pg 205) (you can use just cake flour, if preferred, for a total of 1 ½ cups)
1 tsp baking soda
½ tsp salt1 Preheat the oven to 350˚F.
2 Put the butter and both sugars in the bowl of an electric mixer and beat
on medium-high for a few minutes until well blended, light, and fluff .
3 Add the eggs and vanilla and whip into the butter mixture, then add the
cocoa and coconut and mix on medium speed until well blended.
4 Combine the flour s), baking soda, and salt in a bowl, then slowly add
to the mixer and mix on low speed until just blended, being careful not to
overmix.
5 Line a baking sheet with parchment paper and drop the batter onto the
sheet using a teaspoon. For fl tter cookies, dip a spoon in water and press
down on the dough before baking.
6 Bake for 9 to 11 minutes. Undercooked cookies will be moist and chewy
and a bit more delicate. If you prefer a crisper cookie, leave them in the
oven for a few more minutes.{Makes 3 Dozen}
