Add a "monolog:channels" configuration option

Defining custom channels for use in controllers right now is impossible since they are created automatically. Having a way to define additional channels from the configuration would be easier to handle. You can now define extra channels as:

monolog:
    channels: ["foo", "bar"]

And then use in a controller for example as $this->get("monolog.logger.foo");
