It’s a labor of love, but every bite is worth it! For the dough we are looking for something in between a dumpling wrapper and fluffy pork bun so we are only letting the dough rise for about an hour. Also,I took a little shortcut: instead of making a thick gelatinous stock from scratch, I used store-bought bone broth and added agar agar to thicken it up. What’s even more exciting? You can use the same filling to create delicious soup dumplings because why do through all the trouble for just one dish? I seasoned my salmon with just salt, pepper and garlic powder because the Nuoc Cham sauce has a lot of flavor already. I then air fried my salmon and rolled in rice paper with lettuce, cilantro and cucumber.
