I served this after six hours and it was a great consistency. After 8 hours PLUS , it might turn hard. If this happens, take it out of the freezer to rest for 20 minutes before serving to soften up again.

Recipe Snickerz Ice Cream with Chickpeas! 

Ingredients
1 tin chickpeas, rinsed and well
drained.
1 tin full fat coconut milk (around
400g)
300g Medjool dates, stones re-
moved.
200g peanut butter
50g cacao nibs
50g salted peanuts
1 teaspoon vanilla essence
1 teaspoon Maca powder
(optional)

Method

1. Add the Medjool dates and peanut butter to a food processor and process until the mixture becomes soft and gooey. Remove around 75g and

ice cream layer:
•1 can (13.5oz) full fat canned coconut milk
•1/2 cup peanut butter (or you can use 1 cup peanuts if you have a high speed blender)
•1/3 cup raw honey or pure maple syrup 
•1 tsp pure vanilla extract
•1/2 tsp salt (use 1/4 tsp if using salted peanut butter or peanuts)

chocolate shell:
•10oz dark or semi-sweet chocolate (i used dairy free and refined sugar free)
•2 tbsp coconut oil

instructions:
