This is a savory, delicious one-pot dinner – Curry Beef Udon. This dish has everything you are looking for – rich, flavourful broth, tender slices of beef short ribs, sweetness from the onions, and chewy udon noodles. Curry Beef Udon is one of my favorite comfort foods that are not only tasty but also super easy to make at home.

½ onion 
2 green onions/scallions (for garnish)
1 Tbsp neutral oil
1 Tbsp sake
3 cups dashi (Japanese soup stock) (I used dashi powder to make the stock)
2 cubes Japanese curry roux 
2 tsp soy sauce
2 servings udon noodles (I prefer frozen udon noodles to fresh ones. They just seem better for some reason) 1 protein of choice (I used chicken katsu but you can use pork katsu or even just thin slices of pork)
