The bazaars, the wallah(s)- small unique trades of India.

Food, flowers, bangles. Vegetables, fabric, fish and whatnot. Tea- there's always tea in every village, every city at pretty much every street corner. Coffee spices and coconuts. Taxi, rickshaw, thella and chaabi wallahs (key makers). Vendors selling balloons and books and also specialists to sharpen knives (Chaku wallah) or read your palm to tell you your past and future. You can find all this and so much more on the streets and quaint little marketplaces of India.
