I guess this is more for my American crew as I am sure most Brits don’t need this tutorial!! Also, just to say, I used some very orange eggs but the colour is usually a pale yellowish white! Ingredients: 600ml milk (soya works if you need to be dairy free) 4 eggs 1 tbsp cornstarch 2 tbsp caste sugar 1 tsp vanilla bean paste (or a pod) Method: Heat the milk and vanilla until just boiling and then remove from the heat and if using a vanilla pod, remove the pod too. Crack the eggs into a large bowl, add cornstarch and sugar and whisk until pale. Add in a ladle of the hot milk slowly, whisking the whole time.
