The course begins with an appetizer featuring Hiroshima-born salmon wrapped in buckwheat crepes, followed by roasted quail stuffed with sticky rice served with consomme. Indulge in a luxurious plate of fresh fish delivered directly from Hagi Fishing Port in Yamaguchi, paired with grilled tenderloin steak in red wine sauce. To conclude, we will present a traditional New Year’s dessert.

Born in Hokuto City, Yamanashi Prefecture. He became familiar with his mother's home-cooked meals made with fresh vegetables grown in clean water and fertile soil, and through helping out, he became fascinated with food and aspired to become a chef. We carefully select ingredients that show the face of the producers, and pursue a unique worldview by learning cooking methods that bring out the individuality of the ingredients, such as aroma, texture, and flavor. He specializes in dishes that bring out the natural flavors of the ingredients, and his cooking style, which embodies harmony with nature, has many fans across the country.

Food OZAWA pursues Japanese-style French cuisine
The simplicity that makes you want to enjoy every last bite is OZAWA's signature style. Its roots lie in a cooking style that brings out the natural flavor of the ingredients without using much butter or cream. The lobster steamed egg custard in the photo is our specialty that embodies exactly that. The sauce is made by using whole lobsters and boiling them down over a long period of time, and is characterized by a rich flavor with concentrated umami flavor.
