Since I bake 40-50 loaves a week now, it’s been a much-needed skill I’ve had to learn. Here’s my full tutorial! Equipment: 1. @bakingsteel Baking Steel Plus (linked in my bio) 2. Pizza peel to launch the bread easily into the oven. I’m using the Baking Steel Plus peel, as it’s the perfect size for 4 loaves. 3. Kettle with boiling water 4. Towel to cover glass while pouring water. You don’t want to get any water on the glass, it could shatter! 5. Pan with lava rocks. Alternatively you can use rolled up towels in a pan. 6. @bakingsteel has some amazing options, and size choices! My steel is 14”x22” and it’s perfect for 3-4 1000 gram loaves.
- Cast iron pan, or any other pan to fill with lava rocks
- Lava rocks, I got mine from amazon. Just any landscape-type lava rocks should be fine - A kettle, I have a gooseneck electric kettle that works great to pour the water onto the rocks!

I started with a Dutch oven, but when I was baking multiple loaves and had to juggle multiple Dutch ovens, I hurt my back.
So… I got a Steel to bake on and never went back. A baking steel is a heavy duty flat sheet that is made of cast iron like material and is indestructible. 
It lives in my oven and I never have to take it out, no heavy lifting needed.

It allows me to:

1️⃣ Bake multiple sourdough bread loaves at a time

2️⃣ Bake amazing pizza in 4-5 min

3️⃣ Bake my sourdough brioche delicacies

4️⃣ Bake sourdough pita bread in 3 min

5️⃣ Avoid lifting and cleaning heavy Dutch ovens

It’s been my Number One tool in my sourdough journey!
