Beta-primeverozidaza (EC 3.2.1.149) je enzim sa sistematskim imenom 6-O-(beta-D-ksilopiranozil)-beta-D-glukopiranozid 6-O-(beta-D-ksilozil)-beta-D-glukohidrolaza.[1][2] Ovaj enzim katalizuje sledeću hemijsku reakciju
- 6-O-(beta-D-ksilopiranozil)-beta-D-glukopiranozid + H2O 6-O-(beta-D-ksilopiranozil)-beta-D-glukopiranoza + alkohol
Ovaj enzim je odgovoran za formiranje alkoholne arome u oolong i crnom čaju.
