These stuffed pasta shells are saucy, healthy and delicious! They're full of pesto, spinach, roasted red peppers and mini mozzarella balls, baked with a homemade tomato sauce. They're easy, reheatable and delicious, plus they're vegetarian!

INGREDIENTS & RECIPE

INGREDIENTS
1 package of spaghetti
8 italian meatballs (1 pound rolled into 2 oz balls)
1 jar of marinara sauce
1 cup fresh basil
2 cups mozzarella cheese
1 cup grated parmesan cheese

Step 1
Boil pasta for 7 minutes. Drain and place in a frying pan on low heat. Hadd 3/4 of the sauce and mix well.
Step 2
Add 1/2 the mozzarella cheese and half the parmesan cheese and mix well. Then chope the basil and mix into the pasta.
Step 3
Using a pasta fork, create nests and place them inside a casserole dish. Create 8 nets, and then add the meat balls inside.
Step 4

1. 1/2 pound pasta cooked al dente - 2 minutes less than box instructions.  Will cook longer in the sauce . 
2. 1.5 cup cherry or grape tomatoes cut in half . 
3. 3 tablespoons olive oil 
4. 5-6 large minced garlic 
5. 1/2 teaspoon salt 
6. 1/2 teaspoon chili flakes 
7. 1 teaspoon oregano 
8. 1/2 teaspoon black pepper 
9. 1/4 cup dry white wine or broth 
10. 2 tablespoons tomato paste 
11. 1 cup heavy whipping cream 
12. 1/4 cup Parmesan cheese shredded 
13. Handful of basil sliced into ribbons 
14. Small Mozzarella balls - I used marinaded mozzarella ball but you can use plain as well .
