A rice noodle pancake that soaks up all the sauce. 

*Correction: you will need a third to half the volume of water compared to rice flour, not weight.* correct recipe below. 😎

METHOD
260g Rice flour
200-300g Boiling Water depending on how much you toast the rice flour. 
Pinch of salt

Method

1. Toast rice flour in a pan until fragrant
2. Add half the water (ideally 80°C/176F) and mix well. Add remaining water slowly and knead until a smooth ball of dough forms. Cover and let steam for 5 minutes.
3. Add mix to string hopper press and create noodle pancakes on the string hopper nets.
4. Steam for 5 minutes until cooked through.
 
Notes:
Serve with kiri hodi or any saucy dish you like.
