One of the most surprising things about going vegan is that it has brought me closer to both my Indian culture and to my parents (stay tuned to the end of this video for their cameo).   Being able to cook Indian food for them—after they fed me (and clothed and housed and loved me unconditionally) for decades—is a special kind of joy.   Dal Makhani is a rich and luxurious Punjabi dal made with whole urad dal (they look like black lentils but aren’t technically lentils) and kidney beans. Slowly simmering the dal in lots of spices, aromatics, and tomatoes makes it ultra creamy and deeply flavored. It’s typically finished with cream and butter, but this plant-based version is equally indulgent and flavorful.
