Marinate chicken thighs in lightly seasoned buttermilk - I used sea salt, black pepp, garlic powder, onion powder, cayenne, brown sugar and pickle juice - overnight is best but 2-3h will do 2. Remove from fridge, then dunk into seasoned flour (I use 50:50 plain flour to corn starch) 3. Thoroughly coat the chicken and press flour into each crevasse, then set aside and make the sauce 4. To a saucepan add: 3tbsp Gochujang, 3tbsp ketchup, 3tbsp mirin, 2tbsp dark soy, 2tbsp honey / agave, pinch of togarashi, 1tsp brown sugar, 2tsp rice vinegar 5. Bring to gentle simmer to dissolve sugars, let bubble ~5 mins then set aside 6. Slaw: thinly slice green cabbage, carrot and spring onion, then combine with dressing made from: kewpie mayo, white wine vinegar, togarashi, sea salt, black pepp, brown sugar, agave and MSG - adjust to taste - this slaw is amazing 7. Heat your oil to 350f, then carefully lower in your dredged chicken and fry till golden and crispy ~7 mins. You can double fry these if desired, but start lower, 300f first fry ~6 mins, 375f second fry ~ 1.5 mins (I didn’t) 8. Let your chicken rest and toast your brioche buns in some butter till golden 9. Add your crispy chicken to a bowl with the Korean sauce and toss to fully coat before assembling 10. I also made a creamy burger sauce using some of the Korean glaze and adding it to some kewpie and chives 11. Assemble: toasted bun, slaw, sliced pickles, Korean fried chicken, top sauced bun - The flavours in here are super intense and delicious. A 24h brine always works well but 2-3h will do. It’s more for texture than anything - play around with the measurements for the sauces as everyone likes different heat and acidity.
