You need to roll out a very large piece of fondant, fairly thinly, trying not to get air bubbles and tiny dust particles in the icing. It’s needs to be strong enough to be able to lift up into position around the cake, and still flexible enough. All without allowing it to dry out too much or cracking happens! I add a small amount of Tylose to help it firm up but not too much. I adored the lovely, vintage-chic setting of Nicole and Ryan's wedding at Nicollet Island Pavillion this summer.
