All I do is sear the cabbage wedges in some oil on both sides, until nice and brown, then I pour a little bit of water and salt in the pan and cover it, to steam the cabbage for 5-10 minutes. Once the water is cooked off, I top the cabbage wedges with tonkatsu sauce, kewpie mayo, bonito flakes and seaweed powder.⁣
