This is a staple dish. Simple, fresh and doesn't get boring. Perfectly crispy chicken thighs with a fresh pickled salad and herby rice. Getting that skin crispy is integral, the trick is to pan fry it from cold. Don't move it, the chicken will separate from the pan as it crisps, you will see it lift off the pan, perfect every time.
