A Mediterranean Spin on the Viral Mini Sweet Pepper and Cucumber Salad- this is going to be on repeat 😋 Ingredients: 1 lbs mini peppers 1 lbs mini cucumbers 4 oz feta 1/2 red onion 2 tbs parsley Lemon dressing: 1/4 cup EVOO 1 tbs red wine vinegar 1 lemon, juiced 1 tsp salt Black pepper Method: 1. Wash and de-seed peppers and semi peel cucumbers and thinly sliced them; slice red onion and chop parsley; 2. Throw everything into a salad bowl and crumble some feta cheese; 3.
