I find traditional American style buttercreams way too sweet, so I came up with my own version that has far less icing sugar (in relation to the amount of butter) compared to more traditional recipes. Best part is, it’s still stable enough to use for layered cakes and is great for piping too!

I used softened butter, was sure to sift my sugar (sometimes twice) and was careful to beat it not too slow, not too fast. Yet it often SPLIT. This is when the fat and water separates making it appear grainy or lumpy. 

That was until I discovered what was the culprit: the milk! If you add cold milk (or cream), it can cause your buttercream to seize and split! 😱 Because you often only use a tablespoon or two, recipes rarely specify to bring it to room temperature. 

Simply using ROOM TEMPERATURE milk prevents this from happening AND helps you achieve a silky smooth texture quickly and easily.
