Each one is sure to leave the... | By Sean Alexander | Roteo. Pour that in a bowl and we're going to take a can of cream of mushroom soup All that out there. Don't leave any mushrooms in there. Okay, then we're going to take a can of cream of chicken. A little can scraper here. I'm going to just kind of combine these three together. What's this recipe called? This is Rotel King Ranch Chicken. Sounds good to me. Now, we're going to add in a bell pepper and onion that we've cooked already in butter. Just take maybe half stick of butter with a bell pepper and onion. We'll toss that in our mixture. Got those. Smells buttery. Yeah. Okay. Extra bell pepper and onion and butter. Boy that'll be good. It looks good. Okay now we're going to take two cups of chicken. We have got this chicken here and we have drained it. So we don't need that extra juice in there. One cup. Same stuff. We've drained it. Makes two cups of chicken. Ooh. It's all combined. Going for chicken smaller. If you use a can, if you smash it a little bit, it'll Little breakup. Yeah. Okay? Now, we are going to take corn tortillas in a nine by 13 pan. We're going to make a bottom layer. I like that. Tear them up a little bit maybe. Bad or you could overlap. Oh yeah. Like that. Especially for the bottom layer huh? Yeah. Okay. Looks pretty good. You can just pull these other ones to the side a little bit. Where everything is covered. Okay? All that is covered. Now you're going to take your mixture here. We're going to put a little bit Thought this might be the easiest way that way then you can spread it out. Yeah that makes sense. So you're doing about half the mixture? Yeah. Then I'm going to just take the back of my spoon and spread it out. Everybody gets a little bit on here. Mm mm. Okay, now you're going to follow that with some sharp cheddar cheese. We're just going to sprinkle that on this layer. Was that about half the bag? Yes. Okay. Okay, now you alternate now. Bring some more corn tortillas. Put it on top. Yeah. I think this is going to be a good one, Kim. Just going to put the rest of your mixture out. Plop plop fizz fix. Mm. That looks so good. I'd say when it's cooked it will be. And you're going to put some more cheese on there. It's like used by my hands so I can get around the sides better. Oh yeah. Now we're going to bake this at 350 for about 30 minutes. Alrighty. 350 for 30 minutes. Have a delicious lunch. Alrighty. Ooh that looks good. On this one. Kings Ranch chicken casserole. Mm mm. I cannot wait to sing my teeth in this. Alright, let's give this a try. And chicken casserole. That looks good. That's pretty good. Like a green chicken dinner casserole. Got corn tortillas. These are white corn tortillas. Going to layer this in a nine by thirteen pan. Okay? Then we have got four cups of rotisserie chicken. We're only going to use a half right now. So we're going to get us out. Anymore. Just layer you some rotisserie chicken. It's about half of it. About two cups. Then you're going to take some sour cream sour cream say about one and a quarter cup. We're just going to put little dollops on here. I think it's what you call em and we'll kind of try and spread it out. Okay? Then you're going to take some green enchilada sauce. This is say 28 ounces. We've got 310 ounces. So we're going to go ahead and do one and a half of the cans. Be plenty of moisture for your tortillas. More half. Okay. Now you're going to take and put some got Kobe and Monterey Jack cheese. It's all ready. So the whole bag. Whole bag of cheese which is 2 cups. Now you're going to take your corn tortillas again and make the same layers. They just give me more reflux. Right. Okay now. That's our chicken. This is a rotisserie chicken. Straight from Publix. Says got some of the best for just your chicken. Couldn't agree more. It's looking good. Our cream. If you like sour cream, you can do however you want. You can do one and a quarter or 2 cups. Alright. Okay, but you got your sour cream all spread and you're going to finish up with the other half a can of the green enchilada sauce. I think this is going to be a good one Kim. Mm hmm. I've seen looking at recipes on the back of the cans. Oh we should try that. I tried one of them. Okay and then of course top it off with our Kobe Jack. About 30 minutes. That's kind of hairy. It's got all the different layers but it should be delicious. Mhm. 3 50 30 minutes. Mhm. Alrighty. Okay. Green chicken dinner. It looks so good. Marble effect. I love the green. Mhm. It looks awesome. Alright, I'm going to let this cool down for a minute. Garnish it up and come on try it. Okay, we are going to top this with our crispy onions. Just be a different kind of topping. We thought we'd give it a try. That actually sounds good to me. That should be plenty. Yeah. I ain't even going to taste test it. Mm mm. Charles you want to try this? Which piece would you like? Which piece would you Is that cream cheese in there? No, it's not. It's a surprise. Okay. Let me make sure I got y'all the corn no cottage. I would not give you cottage cheese. What are you trying to do or is it just me? It's just you. Tastes just like enchiladas. It's really good. Yeah. Okay. Good deal. Mm. Some crunchy on it too. That's the onion. It's a French onion. Mm. Yeah. That's sour cream. Oh I like sour cream. Yeah. Towering taco casserole. Mm. This is going to be a good one y'all. You said towering? Towering taco casserole. Wow. Gonna start with the bottom layer of rice. We've sprayed. Um you can cook your own rice. I've got some thyme constraints today. So I got some already frozen rice. Get a nice bottom layer on that. Alright next. We got two pounds of ground beef. Mm. That already browned and cooked. So that's the start of the mixture. What we're going to do now is we're going to add two cans of black beans. Okay. Already drained and rinsed. For most part. Cool. You can only do so much. Right. Pour those in there. Let's get that mixed in there a little bit. Yeah. Just kind of fold the beans into the meat. Fold them beans. Now this one is called a towering taco casserole and you're about to see why. Idea. This one you're going to want to bring when you you get you get together with the big side of the family. You know what I mean? Everybody's got a big side of the family. That's true. In more ways than one. Alright, here we go. We got the corn we're going to add. We got one can of corn. Okay. Mix that in there. Mm. Already drained that one as well. Ooh I love the smell of corn. Corn is great. I need to start growing it so I can get some fresh corn. Yep. Or buy the fresh stuff at the store. It's summertime. Corn's great right now. Need to have a garden. Alright and then we got two cans of mild rotel. If you want to do the spicy stuff that's cool too. I like spicy. My wife does not as much. Same. So you know. You know how that goes. Your wife doesn't like spice yourself either? No sir. What about you? You like it? Mm slightly more but just a little bit more. Just a little. Just a taste. 4K3 is gringito. Exactly. Yeah. Alright. Nice and mixed in there. Yeah, I love all the colors of this one. Retiring taco casserole. Pretty good and mixed in there. Okay, so we're going to take this big old thing right here and we're going to put it over the top of our rice. Wow. Yeah baby. Wow. Starting to understand the name? I understand the name. Powering is right. Look at that. Some some people I know call this the Goliath casserole. Mm. You can call me David, right? I'm about to conquer this thing. Instead of a sling you get a fork. There you go. Alright and then we got a big old bag of sharp cheddar cheese. Mm. I mean towering taco casserole without a ton of cheese on top. That's right. We're going to put about three cups of cheese on top. You want to be generous with the cheese because it there's a whole lot in there and you're going to want to mix that in. Mm. I mean I guess it's whatever you like cheese white. But hopefully they like cheese. Yeah. I mean who doesn't like cheese? It's a good personality trait. I guess I know some people can't eat cheese. Right. That's true. I'm sad. It's just not that thick for them. Okay. So we got that nice headed down. This thing's going to be hefty. Great. Oh my gosh. That wow. 15 pound wow. Alright we're going to put it in the oven at three fifty. Okay. For about 25 to 30 minutes. Wait till that cheese gets nice and bubbly. I'm I almost dropped it. Whoo but that would've been bad. Okay. Here we go. Okay. Look at our towering taco casserole. Oh yeah. Wow. Wow. Oh my gosh. I gotta work out just to build up carry these things. Look at that though. Oh my goodness. Wow. Cheesy goodness. Yeah. Okay. So, we're going to we're going to let this cool for just a second and I'm going to try this. Give it a try. Nice. Smells amazing. Amazing. This would be good for like a church potluck. Just all sorts of stuff. And you throw a little hot sauce on top. I don't have any right now but Those are really good. Four tortillas. And we are going to take six of them. Put them in the bottom of a baking dish or metal pan. If you like to take it or give it to someone. That way you don't have to keep up with your dishes. Lay those in there. Now you're going to make the toppings that we're going to have. You're going to take one pound of hamburger meat that we have cooked with two tablespoons of taco seasoning. Have that done. We'll throw it in our bowl. Smells good. Then, we are going to take one can of chili beans Get all those struck out of there. One can of rotel you can choose mild hot they have different kinds now make your choice and then we only need 15 ounces of these crushed tomatoes so we're going to use half of this can judge it to buzz. Yeah, that's good. Now, we're going to mix this up and this is going to be your mixture. I like this. And we're going to take and put half of this mixture on to the tortillas now. Okay, that's about half. You want to kind of spread it out. And all good and spread out. We are going to take a cup of sharp cheddar cheese. Gonna put that down. So half of the bag we're going to put down. From Publix. Okay, there's our half cup cheese. Now, you're going to bring your corn tortillas back over and put six of them down. There's nothing wild in this dish so most kids would probably eat it. That is always a good thing. Look I got lucky and it pulled out exactly six. You might want to push it down a little bit because now you're going to add the rest of your meat. All of our beans. I'm going to leave you those in there. Spread it out. And we are going to top it with a cup of sour regular sour cream. This is a 16 ounce. We only need a cup so we'll use half of this. And you just gotta kind of do it in little dollops. Cuz it's hard to spread. Oh yeah. I want you to wrap the stuff on there. Yeah. So you want to just kind of do it by little small dollops. It's about a cup full of air. Just going to take the back of the spoon and kind of just marble it through there. Well yeah. That kind of gives everybody a little bit of sour cream. Mm hmm. Okay, once you've got that done, you're going to take the rest of your cheddar cheese and top it. So this will be a cup of cheddar cheese on top. It's looking pretty good. It is looking good. This does look like some of the kids would eat. Yes. I've always been worried about protecting. And the adults. Yeah. Okay? Now we're going to put this in the oven at 350 for about 20 minutes. 350 for 20 minutes. Alrighty. Okay, let's see our La Bamba casserole. Ooh, that's looking good. And it does look good. Well, I like how the sour cream cooked on top. Oh, yes. Okay, we'll let it cool a minute and then give it a tester. Can't wait. Give it a try. Okay, I'm going to get me a little piece right here on this end. Looks good. Come out real good. That looks great. Miss corn tortillas. Mmm. That's really good. Is it? Yeah, it really is. Oh, that's awesome. I haven't had it with corn tortillas. I've had something like it with flour. So, I'm glad that we did the corn because that is really good. Some cheesy fiesta potatoes. We got two large roasted potatoes that we peel, diced, washed, put them in a nine by 13 pan. We took a stick of butter, melted it. We're going to drizzle it over our potatoes. Okay. Now I'm going to toss it. Make sure all of our potatoes is going to get some good old butter on it. Oh yeah. I'm going to make sure everybody has a little butter. Okay. Now we are going to take some Creole seasoning. Ooh. Get that a little dump it. And we're going to sprinkle that. Okay. Now we have got some paprika. But real seasoned strong. Oh yeah. It usually makes me sneeze. Okay you got some paprika. Got some onion powder. I want too much of it but little bit of help. Mhm. And then some garlic powder. I love some good seasonings. Okay, we're going to take some salt. Not a whole bunch because give me your seasons. Got that. Okay. Now, we're going to toss it again. Then we'll add some extra stuff once we get these potatoes done. This is going to bake at 350 for about 40 minutes and then you're going to check it to see if your potatoes are tender. If they're tender, they're done. However tender you want them. So let's bake these for 40 minutes. 40 minutes at 350. Alrighty. Okay let's check out our cheesy fiesta taco. Tacos. These ain't tacos. These are potatoes. Cheesy fiesta potatoes. I got tacos on the brain. Papa's. Tacos. Now while they're still warm we want to get some Gordo's cheese dip. Mm. And we're going to pour it on our potatoes. Some people call me Gordo. I think it's a term of endearment, right? I believe so. Look at that. Ooh. You can't go wrong with anything with cheese on it. This is definitely a fiesta of cheese. Now, we've got some sour cream to top it off with. They said by a cup. So that's half of this or the rest of this container. We used half of it earlier. Marble it through here. This would be like a great side dish for a party or something. Oh yeah. Look at that. Okay. Now, you're just going to let it cool a little bit and then be ready to try. Mhm. Okay. Alright, let's get some of these Gordo cheesy fiesta potatoes. Nice little help and some of y'all are fussing at us about not giving getting big enough helping so that's probably still not big enough but alright let let's try one of these. You want to save some for supper too. Yeah. We thought it'd be best to eat them when they're warm. These are really good. This is like this would be a great side dish to bring you know if you have a family get together or party or something like that. That'd be a good side dish with our chicken tacos. Yeah. Actually it would. This would be a hit for sure y'all. Okay.
