This cake was for my son’ 15th birthday. He asked for the blue sea and water splash. Cake was chocolate, with sweet meringue buttercream and decorated with a splash of isomalt crystal.

A splash of gold

I loved making this splash cake. The ‘splash’ effect is make of old fashioned, home made boiled sugar, coloured with a gel colour. I used edible wafer paper for the waves and painted them with gel colours. I used silver sugar crystals on the waves for
