First, make sure you keep your hands connected, having them touching gives an anchor for the finger opening the clay, and it reduces your chances of having uneven walls during the opening.   Second, aim for that V shape to start with. It will be easier to fix if you have gone too far down, or if its still too thick on the base.  Third, when you start opening, try to pull towards yourself in a straight line, carefull to not go lower, we tend to apply pressure down when opening, and it will make that part of the base thinner, you will have to work more to make your base levelled.
