Stuffing Portobellos has always been my jam. A hallowed out portobello is a perfect vessel to fill and bake off. It’s one delicious little package that can really be filled with anything. Tonight’s version is veggies, quinoa, chicken and cheese. Simple to assemble and so delicious to eat. I made a couple with no chicken for myself and I paired them with a big salad on the side. The really great thing about these is that I assembled them all way earlier in the day and parked them in the fridge until we were ready to eat them making them even more convenient! . . . Chicken and Veggie Stuffed Portobellos . . 2 tbsp olive oil
5 portobello mushrooms 1 red bell pepper, diced 1/2 onion, chopped 2 big handfuls of baby spinach 2 garlic cloves, chopped 
1 cup cooked quinoa 2 cups cooked chicken, cubed (I used rotisserie meat 
1 tbls Calabrian chili paste 1/2 cup panko breadcrumbs 1/4 cup grated Parmesan 
2 eggs, beaten 
salt & pepper to taste 1/4 cup basil, chopped 
1/3 cup parsley, chopped
1 1/2 cup shredded mozzarella - divided Preheat oven to 400 F Heat the olive oil in a skillet and sauté the pepper, onion and garlic until soft, about 7-8 minutes. Add to a bowl and mix in the chicken, quinoa, spinach, panko, herbs, salt, pepper, chili paste, beaten egg, and both cheeses. Mix till all combined. Remove the stem from the mushrooms and scrape out the gills with a spoon. 
Spoon the filling into the mushroom caps then top with remaining cheese. Bake in oven for 20 minutes or until mushroom caps are cooked through and cheese is melted. . . . . . . #stuffedmushrooms #portobellos #stuffedportobellos | Diane Morrisey Cooking
