Instructions:
1. Prepare the Potatoes: Peel the potatoes and cut them into thick slices. Then, cut each slice into chip-sized pieces.
2. First Fry: Heat oil in a deep pan. Add the potato chips and cook them until they are soft but not crunchy. Remove and set aside.
3. Heat the Oil: Let the oil heat up a bit more.
4. Second Fry: Reintroduce the partially cooked chips into the hot oil. Fry until they are golden and crispy.
5. Season the Fries: Remove the fries from the oil and drain on paper towels. Add your favorite seasoning and shake well to coat evenly.
