Venison blackstrap: marinate for 2 hours in soy sauce and olive oil equal parts. Tablespoon honey, sprinkling of ginger, large chopped garlic clove and black pepper. Sear in hot pan with bacon grease and or butter until medium rare, DON'T over cook.
