5.1K reactions · 461 shares | zucchini lasagna🥒🍅🌿a cozy Italian-inspired dinner with layers of summer zucchini, homemade tomato sauce (or use your fave), creamy ricotta + fresh herbs. ✨ingredients (gluten-free) ▫️4 large zucchini ▫️1 1/2 cups dairy-free (or regular) grated mozzarella-style cheese (we like Violife or Miyokos) ▫️ 1/3 cup chopped fresh parsley + basil ✨tomato sauce (or use your fave homemade or jarred sauce): ▫️3 cloves minced garlic ▫️1 chopped onion ▫️2 lbs ground turkey / protein or plant-based ground “beef” of choice such as abbot’s butcher ▫️3 tbsp tomato paste ▫️ salt + black pepper ▫️ 1 tsp dried Italian seasoning ▫️14-oz can tomato sauce ▫️14-oz can crushed tomatoes (San Marzano) ✨ricotta mixture: ▫️15-oz dairy-free (or regular) ricotta (such as Kite-Hill) + 1 cup shredded parmesan cheese (Violife or Miyokos - regular works too) + 1 flax egg (or 1 regular egg) + salt + black pepper Preheat oven 400 F. Slice zucchini lengthwise into thin 1/4”slices. Arrange on parchment-lined baking sheet. Sprinkle with some salt + roast for 12 mins. (helps to remove some moisture) Heat oil in large pot / pan over med. heat. Cook onions for 3 mins. Add garlic + cook for 2-3 mins. Add ground protein + cook + crumble until brown. Add remaining sauce ingredients. Boil then simmer for 20-30 mins, until sauce has thickened + reduced. In a medium bowl, stir together ricotta mixture ingredients until combined. Assemble lasagna in 9x13-inch casserole dish: Add sauce on bottom, top with zucchini slices, add sauce, then ricotta mix, sprinkle mozzarella, parsley + basil. Repeat layering. Cover pan with foil + bake 30 mins. Remove foil + bake again for 10-15 mins. Broil 1-2 mins for a golden top. Garnish with herbs. Slice + serve.
