Homemade sauerkraut. Do you make it? Let us know in the comments! If not, here is a recipe: 

1 medium head of cabbage > 1 TBSP sea salt
1 small head of cabbage > 1 scant TBSP sea salt

For three ½ gallon mason jars, I used 7 small heads of organic cabbage. If they are regular size, 2 heads per jar would work.

1. Peel off outer leaves of cabbage and save for later.
2. Cut the cores out and compost.
3. Thinly chop or shred the cabbage and place in glass bowl.
4. Evenly sprinkle salt over the top, then incorporate it into the rest of the bowl.
5. Let sit for 5-10 minutes.
