Please keep in mind that I bake 2+ times a week so I’m constantly using + rotating my starter. If you are not baking consistently you might have to discard.   Also remember to try and keep at least 25g back up starter in the fridge (just in case!), so if your refrigerator stash gets low, I recommend feeding it and putting it back into the fridge (I usually let it rise for a few hours prior to putting back in the fridge).  Difference between starter vs discard⬇️  Discard is unfed/inactive starter. Sourdough discard is after the starter has peaked and it starts to come down again- I just plop it in the fridge and feed it again when I’m ready to use it! Looking for a solid sourdough bread schedule for baking? Or just not sure how long you should proof your sourdough bread on the counter, how long to put it in the fridge, stretch and folds, etc? Amanda Hansen | Sourdough for Beginners on Instagram: "If you ever get sick, are going out of town, or just need to take a break, you can stick your starter in the fridge and allow your cultures to take a nap for as long as you need. I’ve gone as long as six months. 😅 I feed a ratio of 1:2:1.3 (ex. 1/2 cup starter to 1 cup flour and 2/3 cup water) out of the fridge and she perked right back up in five consistent feedings. 🤗

I suggest doing a power feeding, every 12-hours (discarding in-between) to help those beautiful cultures wake up faster. This will also help your starter not be too acidic to make dough for bread or other baked goods. Too acidic starters can cause underproofing in your dough.
