There’s no question the Beef Wellington is a great dish, but it doesn’t always come out perfect…

There’s so much moisture wrapped up inside the puff pastry, the bottom often gets soggy. It’s also very difficult to nail an edge to edge medium rare while also getting the puff pastry crispy. I’m also a firm believer that crispy prosciutto is the best prosciutto, and that’s something you will never achieve in a traditional Beef Wellington. Lastly, a beef Wellington is a huge commitment of time and money, and can’t really be enjoyed between two people on date night.

This deconstructed version solves each of those problems.
