If you're in the same boat. Try my family's Garlic Basil Pickled Tomatoes recipe. They're sweet, sour, crunchy, and a great way to use up those green tomatoes. Put them on salads, nachos, charcuterie boards, or eat them right out of the jar like me! ⬇️ ⬇️ ⬇️ 💚 INGREDIENTS: 1.5 cups green cherry tomatoes - with hole poked in them 3 sprigs of basil 2 garlic cloves - sliced 1 teaspoon peppercorns 1 cup white vinegar 5% acidity 1 cup water 1 tablespoons granulated sugar 2 teaspoons salt 💚 INSTRUCTIONS: 1. Add green tomatoes, basil, garlic, and peppercorns to a 16 ounce jar. 2. In a small saucepan bring the brine the a boil: vinegar, water, sugar, and salt. 3. Pour the brine over the jarred tomatoes, screw on the lid, and refrigerate for 4 to 5 days. P.S. They last about 3 months in the refrigerator.
