You can do this with about any sourdough bread recipe! If you are following my recipes, they always make 2 loaves, so technically you can make 8 mini loaves if you want!  After your dough has proofed in the fridge and is ready to bake, cut your proofed loaf into 2 or 4 pieces! Seal up the sides by pinching the dough together, and then score your little loaves!   Place in a Dutch oven pot that was preheated for at least 30min on 500°. Bake on 450° for 18-20min with lid on. Remove lid and continue to bake for 18-20min!
