This is our take on the Iranian staple, Shirazi salad. By smacking the cucumbers—a technique borrowed from China—you achieve a crunchy texture along with some smashed pieces that really absorb the dressing. Serve it as part of a spread, as a starter, or as a lunchtime salad.

We LOVE a smacked cucumber salad. Originating in China – smacked cucumber is traditionally combined with flavours such as sesame oil, soy sauce and chilli. Our version uses this technique - which tenderises the cucumber, making it absorb more delicious dressing - but combines it with homemade tzatziki flavours and a wholegrain mustard dressing for a fusion twist!

Serves 6

🌱 2 medium cucumbers
🌱 salt + pepper
🌱 olive oil
🌱 1 tbsp wholegrain mustard
🌱 1 lemon, juice only
🌱 1 tsp maple syrup
🌱 310g (1.25 cups) vegan yoghurt, see notes
🌱 1 garlic clove, peeled + grated
🌱 1 handful of fresh parsley, finely chopped
