I found out a while back that my dear friend Melanie had started blogging.  She was taking a class and asked me to give her some feedback which I happily did. I just went over to check her blog, and found out that we have spontaneously chosen the same template for our blogs. If that doesn’t say “kindred spirits” I don’t know what does. I’ve added her blog to my blogroll to the right.

Melanie writes about wine (for now–I’m trying to convince her to turn to other subjects), and she’s very good at it. So jump over there and give her a read, leave her a comment and let her know I sent you.

What’s Fer Dinner?

A few months ago, in our search to help G with her acid reflux, I came upon this cookbook in the library.  I checked it out, and we read it and liked it so much that we bought a copy. If you suffer from reflux and want to get a handle on it, this is definitely a book to get. It’s written by two doctors and a chef, so you get the science and the food creativity.  You really can’t go wrong, and if she follows it pretty closely, the reflux is kept at bay with minimal medication.

We had both fallen off the good eating wagon a bit recently, but I don’t pay for it like she does.  She really wanted to do the 2-week induction program, so Friday we went to the store, picked up  a lot of greens and other veggies, and I put my thinking cap on. In the first 2 weeks, you are only supposed to eat chicken, fish or turkey breast with lots of low-acide veggies, no dairy, etc.  Chicken is a no-brainer for me, but I wanted to put in some variety. G doesn’t really like fish, but she loves salmon patties.   She’s also not supposed to have onions on this part of the plan, which is tough for me, since I put onions in everything.  So, a challenge.  I rummaged around in the cupboard, and found a can of salmon. So, off I went.

Okay, I cheated, I did use a little onion, but only about half of the piece in the photo and diced up tiny.  I wanted the patties to feel robust for lack of a better word, and also to sneak some veggies in there.  Just as I do with my meat loaf, I chopped the celery fine and grated the others.

Then I popped them into a saute pan with a little olive oil.  Since any kind of pattie cooks quickly, if you don’t want raw veggies, you need to cook them down a little first.

While those were working, I got a piece of the bread we’ve been buying. You can have bread on this 2-week plan, but it has to be whole grain and not much of it. This is really good stuff and our local store recently started carrying it–it sells out fast.

Then, I got out my trusty 1/4 cup and decided to be scientific about this.  Using the cup as a level scoop, this amount above makes 8 patties, just perfectly, without a smidge left over.

Then, I heated a little canola oil (didn’t want the olive oil flavor on these) in a nonstick, and browned the patties in two batches of four.

While they were cooking, I chopped up a few mushrooms, tossed them into my straight-sided sauce pan with a little butter/olive oil mix and when they were soft, tossed in some fresh spinach, added a little nutmeg and black pepper and then just turned off the heat and put a cover on.  The residual heat did the rest.

Finally, I wanted some kind of sauce for the patties and I didn’t have any tartar sauce handy, so I reached in the fridge and pulled out what looked good. This is what I ended up with:

First I put a little mayo in a bowl and added the Mae Ploy, which was good, but a bit too sweet for me.  Then I hit it with some of the horseradish sauce and perfect! I only mixed up enough for the meal, and now I have another sauce I can use on lots of dishes.  Oh, and I just now realized looking at the photo that I bought reduced fat mayo.  I don’t usually, but it’s pretty good.  So, with everything coming together, and hungry folks in the next room, I put it all on the plate:

I have to say, my few little additions/changes, different bread (I usually use club crackers), less onion (adding five-spice) and using a standard measure for the pattied made a big difference.  More consistency and they were GOOD.  No spinach left and only a couple of the patties, which would be good on a salad or even in a sandwich later in the week.  And the best part? No acid! All boxes ticked.

Sparring

Today, I hauled myself out of bed and got ready for my next session with my trainer at the gym.  Once again, I wondered why I scheduled this for Tuesday, which is my Saturday, when all I wanted to do was crawl back under the covers and sleep until noon.  But I set up the appointment precisely BECAUSE it was Tuesday and I had been sitting on my butt typing for the last three days.  Well, we went to the gym on Sunday and I did about 45 minutes on elliptical and stair stepper, but that was about it.  Hence, the Tuesday motivator into the off time.

My right shoulder has really been bugging me. There’s a spot just where the arm bone connects to the shoulder bone, in that little space, like a knot or bunched up muscle or something but it hurts the most when I try to raise my arm directly in front of me, like when you’re reaching into a kitchen cabinet for a plate. OUCH. It’s exactly the same thing that G is dealing with which makes me think sometimes I just inherit her pain. Do people do that? If so, I’d rather not, thank you.  Anyway, my trainer has set up two separate routines for me, and I was trying to figure out which one would hurt my arm the least.  We finally got ourselves sufficiently caffeineated and out the door, and when I got to the gym, I was a few minutes early and went to pull out the equipment for the workout I had decided on.  As I was getting out the weights, mats, etc., I noticed some boxing gloves that I hadn’t seen before and thought, Hmmmm. Shortly, Devin, my trainer, came in and we were talking about workouts, etc., and then he asked me if, maybe next week, I would like him to put together something different.  I said,

“I saw those boxing gloves in there…”

“Oh, would you like to spar? We could set that up…”

“Yes!  Yes! I want to do that now, can we do that today?”  I had no idea that I would be so enthusiastic, but suddenly trying to hit a moving target sounded like the perfect workout.  Devin, being the nicest young man on earth, said sure, and went to get the gloves.  In less than five minutes we were ready to go.  He gave me some brief instructions on various punches, rhythm, etc. and then we started.  We did several quick bouts of 30 seconds, then rested for the same.  Then I did squats.  Then we sparred again.  Then push ups.  More sparring, then lunge-walking across the room.  And sparring.  I think I might have surprised him a couple of times, because I had no trouble HITTING.  I can’t tell you how satisfying the WHACK of my boxing glove hitting smack in the MIDDLE of his padded palm felt.  The sound was perfect.  My goal became to make my left hand hit as hard and as accurately as my right.  I was focused and intent.  I got into it.

And workout?  Let me tell you, that workout was nearly eight hours ago and if my arms weren’t propped on the table while I type this, they’d be falling limply to my sides. Spaghetti, and overcooked at that.  That was A. WORK. OUT.  After half an hour, I can see why pro boxers train for a year before they fight anyone.  And we didn’t even jump rope.  Shhhh! Don’t say that too loudly, you’ll give Devin ideas!

Now, we have a heavy bag here in the garage.  G, bless her heart, bought it for me at a garage sale a couple of years ago, and when I go out and ride my bike on the trainer, lots of times I’ll put on my gloves (yes, I have my own boxing gloves) and go at the bag.  But it’s not the same as working with a real person, who moves you around the room.  Sort of like dancing with a partner versus flailing around the room by yourself.  I don’t much like watching boxing, but I was completely surprised by how much I enjoyed this workout today.  I really got into it.  I’m not meeting with Devin for two weeks, since GS1 will be with us next week, but I think I see more boxing in my future.

Totally Hooked

I watch more TV than I probably should but I’m not really invested in any of it other than DWTS.  It’s just my guilty pleasure.  Then, along came “Scandal.”  Created by the same woman who did “Grey’s Anatomy” and “Private Practice”, neither of which have I watched more than an episode or two.  But this.  Good GOD, this is a show.  Smart, sharp, dialogue to slice you right to the bone, acting that’s as good as any I’ve ever seen and chemistry?  There’s enough chemistry between the main charater (Oliva Pope played brilliantly by Kerry Washington) and the POTUS (Fitzgerald Grant, played by Tony Goldwyn completely redefining himself as an amazing actor) to burn down the house.  I dare you to watch this “one minute” and not get emotional, even if you know nothing about the show.  Just raw honesty between two people.  Seriously, seriously good.  Only 7 episodes in this season because it was a mid-season replacement but it’s gotten picked up for a 2nd season.  The viewers are lucky.

Running Away – Part One

G and I did our Stanley Hotel getaway this past week, and I don’t know when I’ve had a better time anywhere.  The day before we left, it rained all day in Pueblo, great for the garden, but we wondered what the weather would be like at 7500 feet.  We needn’t have worried.  We had 2 days of the most perfect weather, ever, along with an entire town (Estes Park) that wasn’t crowded, very laid back, no traffic, no lines anywhere because of going during the week and the week before the whole placed opened for “the season”.   I love going places off season.  We left very early in the morning, again, not sure of what road conditions would be and just took a leisurely drive up the highway.  Before we knew it, we were there.  The weather was warm and sunny, and the mountains were beautiful.

Then, of course, we had to clown around a little:

We were too early to check in, so we made sure we were on track for our tour, then decided to head to the Cascades Bar, where they have over 400 different varieties of bourbon.  Did I mention that I really LOVE bourbon?

I asked if they carried bourbon from the Breckenridge Distillery, which is probably some of the best bourbon in the world, and made locally in CO.  He managed to find me a bottle and we both had a taste, since he had never tried it.  I know I made a convert that day.  However, I was trying to pace myself, so just decided to have a beer on the veranda and wait for our tour to get started.

 

 After lolling around a bit and enjoying the scenery, we decided to have lunch in the hotel restaurant.   Of course, who should go ahead of us but a group with a whiny, screaming kid.  Ugh.  So, we asked the host to seat us as far as possible from them and, voila!  We were placed in the wine room:

Just FYI, that’s not wine but beer that G is raising, but I guess it doesn’t really matter.  It was a great space and we loved it.  Many of the ingredients for the menu here come from local farmers/growers/makers.  G had the surf and turf special with local beef and I had the lamb gyro with local lamb and we split this wonderful salad:

That’s Nick, our waiter/bartender, graciously posing with the salad.  After that, we were pretty full, but we couldn’t resist when he told us about the maple creme brule with bacon popcorn!  OMG

I confess that I am not a big creme brulee fan, but this dish completely won me over.  It had a crispy layer of mable sugar on top and the custard was light and very creamy, not gelatinous the way they often are.  We shared:

Yes, we were licking the bowl.  When it was truly all gone, we thanked Nick, made our reservatons for dinner the next night, and checked back at the desk and they had our room ready.  We wanted to get our things stowed before the tour.  It was a lovely space on the east side of the hotel, second floor.  It was a great room, except for the looming Bed of Doom.  But we didn’t know that then.  At first glance, it looks perfectly inviting, doesn’t it?  HAHAHA!  Don’t forget, we WERE at the Stanley Hotel, after all.

Good morning and happy Saturday to those who have the day off.  I do not, and have been pounding away down here in the basement since 4 a.m.  I’m about to go up and make breakfast for two hungry boys but first need to get you all set off on the next path to online culinary greatness. 

Let’s just say first of all that I am completely humbled at being chosen for as the winner for Battle Literary Food.  And thank you, Katie, for being such a gracious hostess.

It’s spring!  And in some places (like here) it’s really almost summer.  It’s the first week of May and we already have blossoms on our tomato plants!  Seriously, folks, that’s early.  I’m not complaining though.  I am loving our yard this year more than I ever have.   We have beautiful lettuce, spinach, baby greens and tiny, succulent flowers for nibbling.  Everything is just greening up and burgeoning like I’ve never seen.  This has inspired my choice for the May Smackdown.  Are you ready?  I know you are.  The challenge for May, therefore, is….

Battle Salad! 

I chose this theme with spring in mind.  After a long, cold winter and heavy food, it’s time to lighten up.  I don’t know about you, but I have been craving those sweet new greens, delicate shoots and fresh new fruit (our strawberries are flowering, too!).   And salads are so versatile.  Don’t limit yourself.  Veggies, fruit, meats, pasta, rice, grains, or a combination of all of them.  Get creative and join the fun!

The veterans know the rules but for any new folks who are thinking of playing, here’s how it works:

1. Prepare a salad using any combination of ingredients that strike your fancy.  What’s a salad?  You define it.  This is your playground.  If you’re inspired to make more than three dishes, please self-select which you wish to enter.

2. Post at least one photo and as much description as care to on your blog, then come back and leave a comment here letting everyone know you’re “up.” If you don’t have a blog, email me, and I’ll do my best to include you.  Email is mrfsealah AT hotmail DOT com.

3. Recipes are helpful but not required. If you base your dish on a recipe you found elsewhere, please do the right thing and credit/link to the source. If you wing it (as I did for parts of my tofu pizza) that’s fine too. But it would be swell if you gave us a clue as to your ingredients/methods even without measurements.

4. Deadline is May 31, 2012, so there’s plenty of time to get into your salad days and come up with something wonderful.  

5. I will make my own dish but it will not be a contender.  I will have the final say as to the winner to whom the Culinary Smackdown torch will be passed, and I will post the results as soon as I can.

We’ve got a great group of creative cooks around the blogosphere, so put out the word and toss (ha ha) your hats in the ring!   I can’t wait to see what your culinary imaginations come up with.  Good luck to all!

A Few Things

Once again, it’s Monday.  Finally.  That means it’s my Friday and with luck and maybe working a couple of hours on my days off, I’ll be back on track time-wise with the job.  The new computer is settling in nicely.  Very fast, very quiet.  Lots of USB ports, but not enough in the front.  I’ll figure something out. 

I have a couple of housekeeping issues to mention.  First of all I heard recently from Eggy that WP was not letting her post comments here.  Has anyone else had trouble with that?  Please let me know if you have.   My email is mrfsealah @ hotmail . com.  

Secondly, I realize that sometimes when I post, I forget to put in my WP ID and use my default ID which is to Blogger.  I left Blogger quite a while ago, but still have a blog there and a profile.  If you happen to get sent over there, please try to remember to come back here.   If you want to, that is.  Here is where the fun happens even though I have good intentions (and you all know where they lead) of finishing up the story of my Spain trek from so long ago on the Blogger site.

Thirdly, I need to mention this.  I understand everyone has security concerns online, especially if you mention a lot of personal or business stuff on your blogs.  I like to comment when I read you.  I really do.  But if I can’t recognize the word rec things after two tries, I’m not going to continue.  One word, I could understand, but two odd words?  And one of them so distorted it’s nearly impossible to see?   Sorry, I love all the blogs I read but it’s just too much work.  And my vision is bad enough as it is–don’t need to be weirding it out any more than is necessary.  Just an FYI.

On to the next subject–the garden.  Like most of the rest of the world, we have been experiencing unseasonably warm weather, even in the evenings.  I’ve slept with the bedroom window open for the last few nights.  G. wants to plant EVERYTHING of course, but I’m fighting her on the tomatoes.  The plants look amazing but I still make her bring them in at night or at least put them in the greenhouse.  I’m not losing 28 gorgeous tomato plants.   She also read or saw something about using pallets (the wood kind that you stack stuff on), ran somewhere and dragged a few home and this is what we have on the patio now:

She stapled shade cloth pulled from the front porch on the bottoms and then filled in each row with potting soil.  We’ve got a few pansies and she stuck in some onion sets, cilantro, lettuce and other greens.  We’ve got a smaller one attached to the fence by the hot tub.  I think it’s a fabulous way to recycle and rotate quick-growing things. 

After some thoughts on our potentially toxic planter, we decided to go ahead with it.  We decided to paint it inside and out and also figured that since the material was nearly 30 years old, we and the veggies would probably be all right.  I put in three cucumber seeds on the side next to the wrought iron post which can be used as a trellis, more onion sets and planted the rest of it with lacinato kale.  I’m already seeing some green shoots!  Spinach and other greens are coming up in the green house and the daffys and hyacinths are really gorgeous this year.  I pray we won’t get a hard freeze now that will decimate them.

Finally, we’ve been out on the bikes the last couple of weeks and it’s been fun.  I started taking CoQ10 again and I think it’s helping.  I’m not quite so frustrated with working until 8 pm and enjoying the mornings, even though they’re far too busy.  Till yesterday.  We went on a long ride (well, I went 17 miles, G had to stop and go back at the 5 mile mark, making hers 10.  Then, apparently when she got to our street, she rode her bike standing up on the pedals–just to see if she could, she said, but that was a bad thing.  A REALLY bad thing.  She twisted something in her hip way out and spent the night on the floor in agony.  I got her to our magic chiropractor first thing this morning and now she’s in bed with the TENS unit, Motrin and a heating pad.  She hurt so bad she couldn’t even think of lifing her leg high enough to get into the hot tub.  THAT’S bad.

So, I’m off to check on her, take my chicken out of the oven, see if Peaches will eat any of the food I made for her, clean up the kitchen a bit and get myself on track for my “Friday”.  I’ve already been to the grocery store so that chore’s out of the way for a while.   For those of you who are just starting out your weeks, make it a good day for yourselves!

Rocks and Wire

We found these little cuties at a store up in Old Colorado City on Tuesday (after seeing The Iron Lady–a totally MUST SEE film).  I think it’s amazing what some people can create with the simplest of items.  They enjoyed exploring the dashboard yesterday morning.  Soon, they’ll take up residence in the garden.  Perhaps I’ll have to craft a giant picnic basket for them…

Let’s All Go Watch the Christmas…Belly Dancing?

Saturday while I was working, I saw a post on FB from a friend of mine that she was going to be coming down from Denver on Sunday to perform in a belly dance show with her old troupe from down here.  I met Bean 10 years ago right after I moved out from 2nd husband into my wonderful, tiny apartment.  She came to the housewarming/women’s circle I had there for Imbolc. I was expecting 5 or 6 friends–13 women showed up and it was a wonderful, powerful event.  I am still in touch with many of the women I met that night.

Did I mention that I LOVE belly dancing? Leave aside that it’s fabulous exercise as all dance is, it’s also a wonderful celebration of the female form in all its shapes, sizes and ages.  This troupe personifies that.  Bean said get there early and she was right…there was standing room only.  We were lucky enough to get great seats and photos were encouraged.  Enough said–feast your eyes:

Sadly, my camera battery died before the show was over.  It was a wonderful performance all the way round and I got to meet up with Bean afterward and reconnect over pizza.  Maybe I’ll skip the triathlon this year and take up belly dancing…or maybe belly dancing would help me train!
