This South Indian dish is great as a side, either chilled or at room temperature. It always brings back childhood memories eating sadya meals on banana leaves.   If you're not used to cooking okra and nervous it will go slimy, I've got a bonus video on my top tips dropping later in the week. And if you're still not a fan, you can substitute the okra with cucumber, beetroot, pineapple, pumpkin or any vegetable you fancy. This is such a versatile recipe.
