Toss tomatoes, bell pepper, onion, garlic and add some olive oil. Cover with aluminium foil and roast 20-25 mins. Remove the foil and roast for another 10 mins. * Blend Sauce: Cool roasted veggies, then blend with basil, ricotta/cream cheese, pasta water and the seasoning to creamy consistency. * Combine and Heat: Heat blended sauce in a pan, with the cooked pasta.
