Kafka Connect: Add SMTs for Debezium and AWS DMS

Feature Request / Improvement

The initial Kafka Connect sink submission did not include SMTs from the Tabular version, such as those for processing DMS and Debezium records. It would be useful to have these SMTs, though mostly useful once we address #10842 and add in delta writer support.

Also looking for the JSONToMap transform from the original Tabular kafka-connect version. I'm wondering why these weren't made part of the contribution to Apache, as many folks are using them!
