This avocado chocolate mousse is absolutely amazing, you do not notice that it is made with avocado, honestly. I loved the consistency and the flavour, and it is really easy to make. Ingredients (2 serves): 250g avocado 2 tbsp cocoa powder 2 tbsp honey or maple syrup 5 tbsp milk 1/2 vanilla extract 25g protein powder (chocolate or vanilla flavour) A pinch of salt Blend all ingredients until combined. For the Spicy Aioli:▪️1/3 Cup Mayo▪️1 tsp Sriracha▪️ . 1️⃣ Slice the sweet potatoes in thin 1/4" strips (try to make them as uniform as possible and shorter fries will crisp up better so try to make them around 3" long); soak in cold water for at least 30 minutes (or up to 6 hours), this will remove some of the internal starch that prevents water from evaporating 2️⃣ Preheat the oven to 425°F and line two baking sheets with parchment paper 3️⃣ Drain the fries and dry them off well with paper towel; pour into a bowl and toss with olive oil until all the fries are coated; add the cornstarch and some black pepper and toss again until coated evenly (wait to salt until the end which will maximize crispiness) 4️⃣ Pour fries onto the baking sheets; make sure that they are not touching and that the pans arer not overcrowded (over crowding will cause your fries to steam instead of crisping up) 5️⃣ Bake for 15 minutes, remove the fries from the oven and flip them over, and then bake for an additional 10-15 minutes until the edges are golden brown and fries are crispy 6️⃣ Sprinkle the fries with salt and serve with the spicy aioli or ketchup - enjoy! . ⏲10 minute prep time + 30 minute soak time + 30 minute cook time | Maxine Sharf

Super-Moist Glazed Lemon Loaf (Gluten Free) Yield: 1 9-inch loaf cake Ingredients: 2 cups GF flour blend 2 teaspoons baking powder 1 teaspoon baking soda ½ teaspoon Kosher sea salt ⅛ teaspoon cardamom (optional) ¾ cup raw cane sugar (or regular granulated) 2 Tbsp lemon zest (about 2 lemons) ⅓ cup lemon juice ( about 2 lemons) ¾ cup unsweetened plain yogurt (partial or full fat) ¼ cup neutral oil 3 large eggs, room temperature 1 teaspoon vanilla extract Glaze: ⅓ cup powdered sugar Juice from ½ of a lemon Preheat the oven to 350 degrees F. Spray a standard loaf pan with baking spray and line with parchment paper letting it hang over the long sides. In a large bowl, whisk together the eggs and sugar for 30 seconds by hand. Add the vanilla, oil, yogurt, zest and juice from both lemons,, and whisk to combine. In a separate medium sized bowl, whisk together the flours, baking powder, baking soda, cardamom, and salt. Add the dry ingredients to the wet ingredients and start with a rubber spatula to combine, then whisk until just combined and there are no traces of flour. Transfer the batter to the prepared loaf pan and use a pairing knife to make a ½ inch deep cut down the center of the cake vertically, and bake for 55-65 minutes until a tester comes out just clean. When the cake is baked, cool in the pan for 10 minutes, then remove to a baking rack to finish cooling completely. While the cake cools, whisk the powdered sugar and lemon juice together to form a thick glaze. Spoon the glaze on top of the cooled cake. Lucy made hers with blueberries but I had raspberries in the house so that’s what I used. Not a real recipe here, just combined fresh raspberries and vanilla Greek yogurt in a bowl and stirred gently (so I didn’t break apart the berries to much) to combine. Form clusters and spoon them into a parchment lined baking sheet. Pop in the freezer. While they freeze, melt a bag (2 cups) of dark chocolate chips (I also add 3 tbls of vegetable oil to make it extra smooth and loose) to a double boiler and stir the chocolate until smooth. Remove the clusters from the freezer and dip into the chocolate. Put back on the parchment and let set up and harden. Hit with them with some flaky salt.
