Tempering dark chocolate is essential for achieving a smooth and glossy finish. One of the popular methods is the “seeding method.” Here’s how to do it:

1️⃣ Ensure that your kitchen is cool, as the chocolate will not set properly in a warm environment.

2️⃣ Start by melting 10oz/300g of chopped dark chocolate or chocolate coins over a double boiler on low heat. It should reach a temperature of 113-122F/45-50C. Remember to use a smaller saucepan than the mixing bowl to prevent water from dripping into the chocolate.

3️⃣ Once the chocolate is melted, remove it from the heat and wipe the bottom of the bowl. This step ensures no condensation affects the tempering process.
