Speaking of nachos, i made some of the best ones yet! I found the wagyu skirt steak at my local Costco. Seasoned heavily with my Taco seasoning and they hit the grill over high direct heat.

The key with skirt steak is to not overcook it. 2 minutes per side, rest for 5-10 and it’s perfect every time .

Made my own cheese sauce too. Topped everything with diced tomatoes, red onions, jalapenos, crema and cilantro. These were so good!
