    • 2008, Dr. David Steen, Philip R. Ashurst, editors, Carbonated Soft Drinks: Formulation and Manufacture, John Wiley & Sons, →ISBN, page 62:
Malic acid is a crystalline white solid (m.p. 100°C) and is highly soluble in water. [] Malic acid finds use in a variety of products, mostly in fruit-flavoured carbonates. It is the preferred acidulant in low-calorie drinks and in cider and apple drinks, enhancing flavour and stabilising colour in carbonated and non-carbonated fruit-flavoured drinks.
