Alrighty, what do we have here? Okay, so I follow my eight-hour sourdough recipe but I ran out of time last night. I put my dough in the fridge overnight to finish bulk fermenting and this is what we're working with now. So, hopefully it's not over fermented and she treats me well today. Look at all these bubbles. Alright, so we're just going to pour out and there she goes. So, considering that the dough was not super sticky coming out of the bowl. That is a great sign that it's not over fermented. Alright, let's divide her up. If I never weigh my dough and I'm making more than one loaf, I just eyeball it and there you go, four loaves. Alright, so we're going to start with some jalapeno cheddar, my husband's favorite. What you want to do is you want to stretch out your dough into a large rectangle and you want to add all your ingredients and you want to take one side, fold it over, and then you want to add a little bit to this side and then, you want to take the other side and fold it over and then, add the rest of your inclusions to the top, alright? And that's it. You're just going to roll it up. So, just take the side and gently roll up your dough and then, you want to shape into that nice round ball. Out, pull in, tuck in the underside. So, you want to be careful with loaves with inclusions because if you try to shape too much, they can tear out of the dough and you don't want that. Also, sometimes I don't do a final shape when I'm using inclusions. It just depends on the type of inclusions, how bulky it is after the first shape and if I'm even able to do a second shape. So, since the cheddar in this one is pretty bulky, I'm not going to do a final shape. Upside down into the banatanji goes. So, for this next one, we're doing everything but the bagel seasoning. Remember, if your dough is sticky, you can definitely use flour on your surface or even your hands. Sticky dough does not mean that the bread is going to turn out great. Be generous with your seasonings. Just take your side, fold it over, do the same thing on this side and you're going to fold over the other side and finish off the top and just roll it up. Go ahead and shape it into that nice round bowl. So for this one, I'm only going to do one shape too. I'm just going to stick it into a small bowl instead of a baniton. Just line your bowl with the kitchen towel and then upside down into the bowl. You can either cover it up with a shower cap or if there's a kitchen towel there, you can kind of just fold it over and cover it up that way. So, for the everything with the bagel seasoning one, my kids love to toast spices and put cream cheese on top. So good. Okay, so for this third one, we're going to experiment and do something a bit different. I've had this seasoning for a while now. It's by Flavor God. It's their buttery cinnamon roll. I can never figure out what to use it for in the past but I got an idea. So instead of cinnamon rolls, we're going to try a buttery cinnamon loaf of bread. I have never added butter to my sourdough loafs before they're baked but we're trying it. So we're just going to add some cubes of cold butter like this has to turn out good, right? And then I'm going to add the seasoning. It's sugar, cinnamon, honey, coconut flour, vanilla bean, cardamom, and sea salt. This should be good and then we're going to fold our flap over. Add the seasoning here as well as some butter and fold your other flap over. Add your seasoning here and then finish it off with your butter and then we're just going to roll it up. Okay and I'm also not going to do a final shape for this loaf because I don't want my butter to come out. So these three are done. I'm going to stick them in the fridge to cold proof for two hours and then we're going to score and bake. If you're wondering why I didn't shake that fourth loaf, it's because I'm going to do a separate video. The inclusions on that one are really exciting and I can't wait to share it with you guys. Alright, I've got crumb shots. We've got everything but the bagel seasoning, jalapeno cheddar, and buttery cinnamon roll. See some oven spring. At the crumb on his buttery cinnamon roll loaf.
