Carrot poriyal (carrot stir-fry) 🥕 - a beyond easy, simple, and healthy way to prepare carrots. This is one of my favorite South Indian dishes (specifically tamilnadu style). you can eat it right after preparing or even add it into salads. maybe i’m not so mad anymore about buying wayyyy too many carrots

6 medium carrots, peeled and trimmed
1 1/2 tbsp extra-virgin olive oil 
3/4 tsp mustard seeds
2 dried red chilies
1 1-inch piece ginger, grated (about 1 tsp)
1/4 cup unsweetened shredded coconut 
Kosher salt
Roughly chopped cilantro
