This one is my mum’s bhajia recipe and its the best one out there because you will not find ANY crispier than this. Very fun to overload a dish with spices and then balance it with cream and lemon to make a super flavourful pasta Serves 2 300g pasta 150g sausages (i used spiced lamb sausages) ½ white onion, finely chopped 1 tsp ginger, grated 1 tsp Garlic, grated 1 tbsp black pepper ½ tbsp Coriander seeds ½ tbsp Cumin Seeds ½ tsp chilli flakes 3 tbsp tomato puree ¼ lemon 2 Tbsp double cream 1 Handful of Parmigiano Reggiano, Grated Finely Salt Toast and blitz up the whole spices, you can use ground if thats what you have! Crumble up your sausages and add them to a pan with a drizzle of oil. Cook for 5 - 10 mins until they are crispy and remove and set aside. Add in the onion, garlic and chilli and cook for 1
