Essentially this is the classic version aside from the chives which are optional.  1 shallot diced Knob of butter Pinch of salt 150ml white wine 50ml white wine vinegar 250g cold diced butter Chives Salt to taste   1. Cook the shallot to soften without colouring in a little butter with salt 2. Add the wine and vinegar then reduce by 3/4 turning off the heat at this point ideally. If it’s too cold it must be on the lowest possible heat. 3. Whisk in the cold butter until the sauce emulsifies. 4.
