These classic Lamingtons (or Coconut Squares as we called them growing up), coated with chocolate icing and coconut, are a delicious alternative to a light dessert cake. They're gluten free & dairy free, too!

Dan Lepard's double-chocolate lamingtons caused a minor contretemps when the recipe was published in The Guardian in April 2012. One indignant reader went so far as to call the inclusion of cocoa in the cake ''sacrilege''. The London-based baker loves a lamington. His cookbook Short & Sweet: The Best of Home Baking includes a recipe for the more-traditional jammy variety, but these have a subtle rich-chocolate flavour and feather-light texture that make them equally good.

Recipe video above. There is no cake more Australian than the Lamington! The sponge in this recipe is buttery and moist, generously coated in chocolate and coconut. Sandwiching with jam and cream is optional - takes it over the top, but it's great without. KEY TIP: Freeze the sponge before coating - read Note 2.
